- 3 Vine Ripened Tomatoes (seeded & chopped)
- 1 Cucumber, cut into bite size chunks
- 1 small red onion, sliced
- 1/2 Cup Pitted Kalamata Olives
- 1/2 Cup Olive Oil
- 1/2 lb. Feta Cheese, crumbled
- 1 Tbsp. Chopped Fresh Oregano
- Salt & Pepper
- (You can also add balsamic or white vinegar for more flavor)
In bowl, combine tomatoes, cucumber, onion & olives. Drizzle with olive oil. Sprinkle with feta cheese & oregano. Add salt & pepper to taste.
